How do I change the display adapter that the game starts in?

I just fired up Assassin's Creed 2 and let it idle, which I haven't done before. The idle movie that played involved Ezio chasing down a man during the festival in Venice, cornering him in an alley, and then shooting him with the gun attachment to the hidden blade - upgrades that I just recently unlocked in my save. "Cool!", I thought, "it's giving me a recap of what I just did in-game!" But then it occurred to me that maybe there's only one movie and they simply chose to show off some of the more neato-sweeto tools of the assassin's trade. Assassin's Creed 2 gets stuck at the cut-scene where: Leonardo DiVinci repairs your hidden blade, just as you get it. I can open the map, options dialog, and change weapons but the cut-scene will not proceed. I have tried replaying this memory several times, but it does not help. I am running AC2 on Steam via UPlay (Windows 7, SP1, 64 bit). This is a legit copy. Googling around suggests some others are having issues with this scene as well, but the issues seem to be with pirated copies only.
I just bought the first Assassin's Creed on Steam. The game plays fine, but the voices are difficult to make out. Is there a way to turn on subtitles in the PC version of Assassin's Creed?
Late last night (around midnight EDT), I tried to play Assassin's Creed 2 on the PC via Steam. I was unable to even get past the Uplay login screen because Ubisoft's service was down. Not only... of things. However, these events have me questioning whether I still need an Internet connection to use the Uplay service and launch Assassin's Creed 2. Is there a workaround for this or an offline mode that I could use? I did not notice any settings that I could change in Ubisoft's launcher.
With games like CoD MW3/BO2 and BF3, I've been able to change the display mode from the default fullscreen to fullscreen (windowed), this allows me to select off the game more easily, which I prefer. I've been unable to find a similar feature for Assassin's Creed III. Is there an option to do this? If not, why not? Thanks.
Some games (like Mass Effect 2) build on the saved games from earlier versions by allowing the player to keep going with the choices they'd made earlier. Assassin's Creed isn't big on non-linearity, but my ACII character does have nice armor, weapons, and some cash. Will AC: Brotherhood notice that saved game and pick up information from it or does Brotherhood always start from scratch?

So uhm. I've been playing Assassin's Creed IV, and I'm trying to take screenshots... but I haven't been able to. If I press PrintScreen the game freezes for a fraction of a second, but if I alt-tab to another program and paste, I see that what's been captured is a screenshot of the computer behind the game. That is, Firefox, Skype, etc. I looked around in Documents, in Images, in the installation... it, is there a way to make the game windowed? Then I bet Windows' normal screenshot feature wouldn't return what's behind the full-screen game.
